Soil; sandy and chalky

Harvest:

-Period; end of August.

Vinification:

Maceration: absent, soft pressing of entire grapes

Alcoholic fermentation: in Barrique with own yeast

for about 2 months

Malo-lactic fermentation: absent, 10% fulfilled

Second fermentation the following March after the

harvest

Disgorgement after two years with “liqueur

d’expedition” (Arneis Passito)

Sensory Profile

Fine and persistent perlage. Intense straw yellow

colour. Elegant bouquet with dried flowers and

toasted crust bread. The foam is creamy and

crunchy, never aggressive. It reminds the pear and

the “Renetta” apple. Aftertaste of yeast, soft,

mineral and lightly bitter.
