Vinification:

-Soft pressing,

-Alcoholic fermentation in steel tank.

-Second fermentation in following March

adding sugar and yeast for 18 months.

-Disgorgements: from the second year with

“liqueur d’expedition” (Arneis Passito)

Sensory profile

Yellow straw colour. Persistent perlage.

Fragrance of yeast and exotic fruits. The

foam is creamy and crunchy, never

aggressive. It reminds the pear and the

“Renetta” apple. Aftertaste of yeast, soft,

mineral and lightly bitter.
